Ingredients3 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
2 c. sugar, divided
2 pints fresh strawberries, chopped
4 eggs, beaten
1/4 c. vegetable oil
1 c. chopped pecans
whipped cream cheese
Directions
Combine flour, baking soda, salt, cinnamon and 1 c. sugar. Set aside.
Sprinkle 1 c. sugar over chopped berries, stir to mix and let stand until juice forms, about 45 minutes. Add to dry ingredients with eggs and oil; stir to moisten flour. Gently stir in pecans.
Pour into 1 greased 10x6x3-inch loaf pan or 2 8- or 9-inch pans. Bake in a 325-degree oven for 1 hour 20 minutes for large loaf pan or 1 hour for smaller pans.
Cool before cutting. Serve with whipped cream cheese.
