Pasta Fajoli

Ingredients
3 cans of canolli white beans (do not drain) or 1 lb. dry white beans soaked over night and rinsed..
2 large onions, chopped
2-4 cloves garlic, minced
2 Tbls. extra virgin olive oil
1/2 c. sweet basil leaves
1/2 c. parsley
1 c. chopped celery
2 c. cooked pasta
2 cans (14 oz) chicken broth
1 c. water
1/8 tsp. crushed red pepper, or to taste
salt and pepper to taste

Directions
Fry onions and garlic in olive oil until just white, do not brown. Add all other ingredients except pasta. Simmer for 45 minutes to 1 hour, then add pasta and serve immediately.

For Beans and Greens soup: add a head of escarole, washed and broken into small pieces.

Ham, smoked pork hocks or Italian sausage can be added to either soup.
