Nannie's Molasses Drop Cookies

1 cup of shortening
1 egg, beaten
1 cup of dark molasses
1 cup sugar
1 cup of cold coffee
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon baking soda
½ cup hot water
5 cups all-purpose flour
Dash of salt

Melt shortening. Add egg, molasses and sugar to melted shortening in a large bowl. Blend well. Next add cold coffee, ginger and cinnamon to mixture. Add baking soda to the ½ cup of hot water, then add to the batter. You will see a rising of the mixture take place. Now slowly add flour and salt to the liquid mixture. Drop by teaspoonfuls on a cookie sheet and bake at 325 degrees for 10 minutes. Makes about 6 dozen.

Per cookie: 80 calories (34 percent from fat), 3 g fat (0.7 g saturated, 1.3 g monounsaturated), 3 mg cholesterol, 1 g protein, 12.4 g carbohydrates, 0.3 g fiber, 20 mg sodium.
