Hot Artichoke and Roasted Pepper Dip

Ingredients
2-3 green onions, sliced thin
2 tsp. butter or margarine
1 (14 oz) can artichoke hearts, drained and chopped
1 c. grated Parmesan cheese
1 c. lite mayonnaise
1 (7 oz) jar roasted sweet peppers, drained and chopped
ground pepper to taste
2 Tbsp. grated Parmesan cheese
2 Tbsp. seasoned bread crumbs
fresh parsley for garnish
flat bread or bagel crisps for dipping

Directions
Cook onion in hot butter in a medium skillet until tender. Remove from heat. Stir in artichoke hearts and 1 c. parmesan cheese, mayonnaise, red peppers and ground pepper. Spread evenly in a 9-inch ceramic/clay pie dish or quiche dish. Sprinkle with bread crumbs and parmesan cheese.

Bake, uncovered, in a 350 degree oven for 20 minutes or heated through.

OR...can be microwaved on high for 7-9 minutes. Turn halfway through.

Serve warm.
