If you're short on time, use purchased caramel sauce for ease.
1 tablespoon butter
5 Gala apples, peeled and sliced
½ cup apple juice
3 tablespoons brown sugar
¼ teaspoon ground cinnamon
Caramel Sauce
1 recipe Cinnamon-Crunch Shortcakes
Whipped cream
Melt butter in a large skillet over medium-high heat; add apples, tossing to coat. Stir in apple juice, brown sugar and cinnamon. Bring to a boil; reduce heat to low, and simmer 10 to 15 minutes or until apples are tender.
Pour ½ cup Caramel Sauce over apples, tossing to coat. Split Cinnamon-Crunch Shortcakes in half. Layer half of biscuit halves with apple mixture and whipped cream. Top with remaining biscuit halves. Drizzle with remaining Caramel Sauce.
Caramel Sauce:
Makes 4 cups
Prep: 5 min., Cook: 20 min.
3 cups sugar
1 cup water
2 cups whipping cream
Pour sugar into a heavy 3.5-quart saucepan. Stir in 1 cup water. Bring mixture to a boil and cook, without stirring, 15 to 20 minutes or until it turns a caramel color. Swirl mixture around pan until it turns golden amber in color. Remove from heat, and slowly add cream, stirring constantly with a long wooden spoon. (If caramel begins to clump and harden, return to low heat, and stir until smooth.)
