Ingredients3 Tbsp. red wine vinegar
1 1/2 Tbsp. olive oil
salt and pepper to taste
1 can black-eyed peas, drained
1 small can mushrooms, drained
1 small bottle pimentos, drained
1 stalk celery, chopped fine
1/4 c. fresh cilantro, chopped
1/4 c. diced green pepper
1/4 c. diced green onion
fresh cilantro sprigs for garnish
Directions
Combine first 4 ingredients in a medium bowl; stir well. Add the rest of the ingredients; stir well. Cover and chill at least one hour. Stir before serving. Garnish with cilantro sprigs.
